It's easy for the carnivors on this forum! They can eat a very low carb meal whereas us vegi's and vegans struggle. I do drink milk, so I am not vegan, but I don't eat eggs or meat from any living (or dead) creature. So, fellow vegi/vegans, what do YOU eat? I need to cut down on my carbs quite a bit. I am gradually shifting my meals away from carb based to fat based. I.E instead of fruit and cream consisting of a banana, grapes, kiwi and elmlea cream, I now have 5 low carb Morrisons cheese crackers with 15grm peanut butter and some vegi cheese. A lot more fat, I think, but lower in carbs. Is this the right way to go? I have also cut my breakfast carbs with no ill effects. My vegi meals, mainly ordinary veg with some bought in foods such as vegi burger or beanfeast, are also under scrutiny. I used to having either 40grms of pasta or rice with my meals, cut down? keep the same? I am managing to cut back on potato by using butternut squash instead. I am checking out the carbs on tinned stuff like baked beans too.

When I have a low carb vegetarian meal I'll have cauliflower cheese, cauliflower rice and squash risotto, vegetable soup. In fact, cauliflower rice van be substitutes for normal rice, so how about vegetable curry, quorn mince chilli?

I recently tried vegetarian parmesan, with sirataki noodles and pesto, and it was very nice!

I looked at Quorn some years back but discovered it had egg as an ingredient. I don't eat egg so I can't use it. I recently had to switch which wine I drink because most wines have egg in them. I am just getting into vegitarian cheese which has opened up my horizons a bit. And as for vegi curry... Love the stuff! Butternut squash is just about my favourite veg, any recipe I can find I will try. Yottam Ottolenghi has a fantastic squash meal, wine braised shallotts with a root veg mash. I will now have to check out the ingredients to make sure I am not using too many carbs.
I will check out the websites WhitbyJet. I bought some egg substitute a few years back. It exceeded its use by date before I got round to trying it! Lazy person alert. I am getting a list together of things I now need to look for in the shops.
Lots more advice wanted please!
