I suppose it would depend on what you can tolerate JoeyK. Some could, now and then, but others would leave it out all together.
I loved sushi, I used to buy a small pack of it , but can't eat it already made up.
Good luck, it may not bring you good results, it will be trial and error.
You could try and make your own low carb sushi using cauliflower rice. If you didn't eat much you would still be low carb but it may not do your BG levels an good. As @Robinredbreast says it comes down to what you can tolerate. Try a piece and test.
If the rice is double cooked to make the starch resistive this would help as well.

I never thought of Cauliflower rice. I used to buy sushi now and then as a treat, but when I became coeliac, to my horror, there was wheat in it. I might give it a go, loved the veggie ones and the tuna too
I saw a post on Pinterest about low carb sushi made with cauli rice - I'm not savvy enough to cross reference it but I'm sure if you google low carb sushi you will get an abundance of recipes
I've not tried it, but this looked good when they made it on Sunday Brunch a few weeks ago. Sushi made with cauli rice. Would only need a few tweaks to make it lower carb.
I am on LCHF and ate sushi recently. I ate just 4 pieces (figured out it was about 15 g of carbs total) and then ate just the fish without rice. It worked out extremely well, with a bolus of 1.5 units of NovoRapid.
