Firstly there are custom roms built from AOSP, and you can add to that as much or little as you want of google. If that is too strong for you, there are many sources of info of de-googling standard phone roms. FWIW I run a pixel 6a but have the os hardened a bit, with very little info going back to google, no location stuff, no history saved, no cookies saved….It’s a balance of pig-headedness vs convenience of all those services.
