Easy meal ideas please!

We are having some building work done, so will be without a kitchen for about 7 weeks, at best estimate, probably longer.
We will be surviving with the bathroom for washing dishes, bedroom for prep and we have a microwave. Oh and we also have a bbq. On the plus side there is only my husband and I, don't know how people do this with children.
I low carb and sadly my husband just had a fasting bg level of 6.3 so he is as well now, although he had massively cut his carbs down with me, really just having cereal and bread that I wouldn't.
Ideas for easy meals welcome, I keep my fats limited to so called healthy fats from nuts, fish etc., as when I first low carbed I increased my saturated fat intake in cheese, cream etc., and my trigs and ldl increased considerably so I now stick mostly, to healthy fats.
 
Will you have a freezer or someone who can kindly lend you some freezer space, do a big batch cook of meals that you can heat up in the microwave, I was in same position a few years ago although before diagnosis- I bought a mini oven that had two hot plates on the top was a godsend about £60 in Argos - see if you can get one second hand. A slow cooker was very useful too, an electric multi cooker, beg borrow or steal from people.

If the weather permits the bbq will be useful, supermarkets with rotisserie counters can be handy on the days you get fed up, they do chicken, belly pork sausage ham hocks etc.

Good luck with your building work it is a better time of year than we did ours, it was a freezing winter and right over Christmas - still managed to make Christmas dinner for 7 - you will become very inventive lol
 
get some of those tinfoil bbq trays and you can easily do salmon ( or any other fish ) on the bbq
i marinade mine in a bit of soy,fish sauce, and lemon and brush with olive oil to prevent sticking to the tray
combined with veggies grilled on the bbq too -- tomatoes , peppers ,courgettes are all lovely

Thanks I have half a dozen meals in the freezer, meant to do more but ran out of time:(
I have a slow cooker it is just washing it in the bathroom that I am worried about! I have a sink in my kitchen at the moment but as I am moving the kitchen it can't stay there for long!

I hadn't actually thought of a supermarket with a rotisserie counter, our local sainsburys has one, good idea for something different.

Yes we are lucky to do it in the summer, I just want everything done by christmas. It was all planned to start much earlier but due to various issues we started late and have lost our place with the kitchen fitters!! But it could be worse, we are not cold, we have wine, and I have no children at home, there is no way I could have done this when my two boys were at home!

Meant to say I used a cheap baby bath for washing up, saves scratching your bath and more room than the sink - like I said you will become very inventive and it's all worth it in the end :-)
 
Aldi sell a fresh Sri Lankan chicken soup which is really nice and only about 12g carbs for half a pot so an easy lunch in the microwave
