Easy To Make Pesto

Finally going to attempt spiraliser, courgettes probably, but is there a very easy pesto that's low carb with easy to obtain ingredients.
Are there low carb Noodles?
 
I always make my own pesto @Zixx . Here is my recipe.

1/2 cup of olive oil. I use the extra virgin oil

1/3 of a cup of freshly grated / grated Parmigiano Reggiano cheese. Available in any supermarket. I'm quite generous so I use a but more.

1/3 cup of pine nuts, but you can swop out pine nuts for pistachios if you prefer.

A finely chopped garlic clove

Two cups of fresh basil leaves. If I buy the large packets of fresh basil I remove the thick stems , but the soft stems I include.

A dash of lemon juice, salt and pepper and put it in the blender / food processor and zap it until I like the consistency. I freeze what I don't use.

I once made a pesto much like yours, except I used nettle leaves instead of basil, tasted very good!
Young nettles are the best for cooking so this would have to wait for spring.
Oh, and don't taste it right away like I did, it takes a little while for the sting to disappear from the nettles. :hilarious:

That sounds like a great alternative @Antje77 . Nettles are hard to come by here. I'd have to purchase the seeds, but I wouldn't mind trying them.

Do not plant nettles anywhere near your home, you'll regret it. Someone considering buying nettle seeds is very much a first to me! :hilarious:
And I'll stop the derailing here.

@Zixx , I don't have any experience with low carb noodles (I usually just have the sauce without the noodles, or use cabbage or another vegetable instead of the noodles), but konjac noodles are very low carb, and easily avilable in many stores or online. Have a google search for them, I'm in the wrong country so I can't help you with a particular brand.

Apparently some people hate them, others think them a very acceptable substitute for noodles, so you'll have to try.

I can usually manage my blood sugar with the edamame. Lots of protein too.

I too go down the edamame/black bean spaghetti when I "really" need pasta :), I don't dislike konjac noodles, but find that they're a better replacement for noodles in a stir fry or other chinese food.
