Some of us find that after low-carbing for a while, and keeping our blood glucose well under control, we can occasionally eat something high carb with very little effect. I can do this now - eg chips occasionally - but if I started eating too much carb too often, they would soon start creeping up to a higher level - permanently  .
Sugar is still a carbohydrate - just a very fast-acting one. It may be that you spiked very high immediately on eating the desserts, and by the time you tested it was coming down again. Safest to leave it for the occasional treat - we are all human, after all, and deserve a little spoiling sometimes!
