I'd suggest first of all getting hold of a glucometer (if you haven't already got one) and testing in a structured way, recording what you ate and what effect it had on your BG. You're looking to test before you eat, to establish a baseline, and then again two hours later. The idea is that the secong reading will be within 2 of the first, and not higher than 8.0. This is not to see "how high you go" - the peak BG will probably be around the 45 minute mark. It's to see how well your system dealt with the carb in whatever you ate. This way you build up a picture of which foods do what to your BG in the short term, and should give you good evidence of what happens (or doesn't) when you eliminate them.
We are all different and seem to react differently to the carb in different food. I can manage some legumes, others can't, and for some reason pastry sends my levels right up. Glycaemic Index - I find - is totally useless as a predictor.
So - just about five years ago I cut out bread, cereals, rice, pasta, fruit and fruit juices, pastry, anything sugary sweet, potatoes, and beer. That was in the plan for a daily carb intake of around 20g, with the intention of getting into ketosis and staying there. It's worked very well for me - others get equally good results with different regimes - you really have to find what works best for you, not necessarily what works for other people.
