In addition to @MissMuffett 's comment, if it had a breadcrumb coating, that would also be a culprit candidate.I have T2D which does not require medication, but I have to be careful about what I eat. Boiled eggs, fried eggs, and omelets do not increase my blood sugar, but Scotch Egg does . . . very much. Any ideas why?

Whilst a Scotch Egg contains an egg, it's only part of it.

Scotch egg will be the sausage meat and the breadcrumbs. Eggs are good but if I have too many boiled ones I bloat and get bunged up! Scotch eggs are boiled eggs plus sausage meat plus breadcrumb. Typical sausage meat might have 30-40% oatmeal or similar filler. Some are even higher in carb - I think Morrison's do a "sausage" that is only 30% meat. Bread is typically around 70% carb. Breadcrumb, being dried, may be much higher. This. Google keto scotch egg and you'll find loads 0.5-2g per scotch egg recipes. Don't need to a slimmer or be keto = they just taste better.I've made my own in my past slimming world life! I used good quality sausages with 100% meat and used the filling to cover the boiled egg. No breadcrumbs on the outside but sprinkled with rosemary salt and then baked in the oven.
