started low carb on saturday with good results so far but one thing is bothering me, i seem to be eating an awful lot of eggs, is this a problem and if so how many are recommended daily?
I'm unaware of any creditable study that succeeds in linking eggs with increased cholesterol (dietary cholesterol has very little impact on serum cholesterol), and eggs are wee power houses of nutrition.
You may find that your egg consumption evens out after a while.
Love them as I do, I can't enjoy more than 5 or 6 week without a binding effect and a sulphurous, er... backlash.
A little shopping for other convenient sources of protein and fat that I like are 1 - 1 1/2 oz nuts; or 1/2 - 1 avocado; or sliced green and red peppers with 1 - 2 tablespoons FAGE 2% unsweetened yogurt; or some vegetables such as brussell sprouts (which are both high in protein and filling), sliced and pan fried in 1 - 2 tablespoons of butter. If you steam them a bit at first then remove the lid to let them caramelize a little on each side, they taste like they've been roasted. Yum. I occasionally have these for breakfast, but I like bitter vegetables.
If you haven't already, you can get a blood lipid profile that includes triglycerides, HDL, LDL, and cholesterol now, then again in 3 - 6 months to see if your numbers are improving. I did this 1 week into the diet, and my doctor is going to repeat it in 3 months. The good news is that many people find that the LCHF diet improves all of their lab results.
