rude d/n nurses and being treated like im wierd because im diabetic
i spent the whole morning baking the cakes from the page and each turned out stunning . i defo urge anyone looking for a sweet treat to try i baked the lovley lemon cake, bluebery muffins. cheese crackers .. and my fav bounty bars so easy to make to yummmmyyy great recipies i will return to again and again
 
the problem is not eating the whole batch, i agree, its soooo good
 
ewwlina I have looked at your blog and all the great recipes - so many I want to try! Several of them (the lemon in particular) use soy flour, is it possible to use a different flour instead? if not where is the beat place to buy soy flour?
 
You could use ground almond only but the cake will be heavier (but still good). Almond flour you can buy in any health food store (holland&barret or similar) or online
 
Thank you ewelina and paul-1976. I have stocked up with ground almonds from Lidl so will try the lemon cake with this. I also bought coconut flour from holland and barrett so need to use this up. I wasn't too keen on what I made before though

I agree. I bought coconut flour but wasnt impressed with what I baked. I definately prefer almonds and soy flour
 
last time i made it (just before christmas for my trifle) i had 10g too little soy left so i bumped up the almond by that amount and found i prefered it, i liked it before but the slight reduction in soy seemed to make it a bit better, but maybe it was in my imagination
 
You might be right Andy. I still experiment with almonds and soy flour and i think ratio 2:1 works the best.
