Magnesium helped me with sleep a lot too, especially taking in the evening. I tried setting up some 'bedtime routines' that helped a bit too, but I still occasionally wake up and just can't get back to sleep.
I worry you aren't actually eating enough though, especially with the training. I know when I don't eat enough and wait long periods between eating during the day, my levels get a bit higher (maybe our bodies think we aren't getting enough energy so they dump some glucose in our systems). But it actually seems like your blood sugar is just staying high, and not actually spiking that much, which makes me think something else is at play.
But you have a plan - focus on sleep, keep up the exercise, and hopefully you can chat to the doctor soon.
