The presenter is Dr Mark Hyman and as I posted in the comment section below the video, Bob's Red Mill unmodified potato starch (ie raw potato starch) in large doses has been proven to cause fatty liver - so not a good idea at all. See for example:
If you want to use resistant starch, it would be a much better idea to eat real food sources like plantains, yams, jerusalem artichokes, etc.
However, the big warning is for people who have issues with gas/bloating already as it may be a symptom of SIBO (small intestine bacterial overgrowth) - you risk making your symptoms a lot worse by consuming some of these foods. Start small!

obviously both of you do not know of dr.hyman and his work ---and saying better to have real food?? some of us can't get j arti--etc..this starch from spuds can't get more real then that--holland and barret sell a german pot starch-very cheaply-and of course don't over do it---who said one should... this helps diabetes and has been proven--so for this site --this is good news indeed..
Did you read the link from Dr Grace Liu's site about the proven effects of raw potato starch and how it decimates the good bacteria in the gut? Anyone with diabetes should be very concerned about anything that can cause fatty liver - most of us have that already and want to reverse it, not worsen it.
I have nothing against Dr Hyman - I've been following his work for several years now. His new work setting up the functional medicine clinic at the Cleveland Clinic is outstanding. Please don't imply negativity towards the man and his work when I'm only disagreeing with one part of his message.
