Fake rice - a success :)

Hi everyone

I just finished my dinner and I had to share :) I tried for the first time the cauliflower "rice" and it was really yummy.

I fried off the cauliflower in some olive oil and butter, garlic, tumeric and chilli.....

Then in another pan I put some mushrooms in some butter and then added some cream...

Then served cauliflower rice and mushrooms with a couple of 90% sausages... :)

I am dead chuffed - it was realy yummy.... I do not know what effect on BS is going to be, but it was quite a low carb dinner.. will have to wait 2 hrs..

I am armed with fresh gauliflower to make the rice. You have reminded me I bought it. Thank you.
 
Just to say that yesterday before evening meal i was 7.5 .....+2hrs i was 6.9 so i guess it was a good meal :)
 
That sounds nice! How do I make the rice, do I grate the cauliflower first? Does it have to be fresh or can I use frozen and let it defrost first?

I really miss rice so I'd really like to give this a go :)

I just took a fresh cauliflower, broke the florets off and then put them in batches in a food processor (mine is not very big) and then blitz it until it is in crumbs.

I do not know if it will work out with frozen. I guess if you defrost it, it might be a bit soggy
