We had the FIL staying with us this weekend, he's not far off 80, been T2 for years, I'm not sure what his last hba1c was but not great apparently. His HCPs however prescribe him testing strips amazingly (3 tests a day was quoted to him) He said he's had results in the high teens sometimes - but it's a waste! He hasn't been told how best to structure his restricted testing, blindly follows the eat well plate and doesn't connect carbs with high BG even if he knew what foods contained carbs.

How many of his age are stuck in the same boat I wonder?

The great thing was saturday night tea we did the first recipe we came across on the low carb thread - cabbage with cream and cheese type thing with added chicken and mushrooms, it was very nice and the best thing was he was 5.4 before and 5.7 2hrs after. Wish I could have said the same about me!

Can I have the recipe for the "cabbage with cream and cheese type thing with added chicken and mushrooms" please as it sounds like something I might like?
 
Hi Arab Horse, as I say it was taken from the low carb recipe thread ('daves creamy cheese cabbage') and then I added to it. If you're expected a 200g of this and 5g of that and cook for precisely 5 mins type recipe then too bad :p

But here it is:

Use butter, fry off sliced chicken Breast, slightly brown, put to one side. Then fry off thinly sliced bacon and sliced onion and large sliced mushroom again in a bit of butter, cook for a few mins then add de-cored sliced cabbage, and a glug of white wine (you could use water instead), cover and steam the cabbage until wilted/slightly soft, re-add the chicken, add cream, and Parmesan cheese (could use extra strong cheddar instead), season with salt and lots of pepper to taste and stir/mix. You can add whole grain mustard too with the cream. Cover and cook for another few mins.

I am not a "200g of this and 5g of that sort of cook so that suits me fine; thanks very much, I will give it a go.
