This might be a long shot but are your souls and stir fries full of nightshade vegetables ( tomato potato eggplant and peppers of all kinds). I have many food intolerances and need to be careful with those
The other thing, probably more important is where's the fat? Perhaps adding some avocado, nuts, butter, olive oil would help. Also are you adding sea salt to your meals ? Low carb is dehydrating and sea salt helps a lot with fatigue
In my mind there is no such thing as too strict with carbs provided you are eating enough fat. You don't need to gob it on or eat saturated fats but fat is a required nutrient for life, even more so when low carbing. I would eat some avocado and some nuts if you tolerate them. Olives, mayo, oils etc. I don't tolerate dairy but if you do that's another option.
