I can't recommend a specific doctor as I suspect that most will trot out the usual NHS diabetic treatment advice. You could always change the diet yourself, lots of low carb recipes on this site. Does your mum have a meter so that she can check her own blood glucose levels ? Very useful piece of equipment and necessary if she is on meds to lower her blood sugar. x

@viks - Is your Mum very enthusiastic to coming off insulin because it is a long slow process which takes a lot of commitment and very frequent testing but it can be done. It helps if you have support from someone in her health care team - has as he tried approaching them to talk about it?
I can tell you what I did but, as it says in my signature, it might not be suitable for your Mum.
