Finger Licking Not Good

So today I made jam having raided our strawberry garden. I love making jam especially the bit where you put it on a cold plate and push it with your finger to see if it's set. And having done that I licked my finger (well you have to taste it don't you!). To be fair I didn't think anything of it until I thought my blood sugar feels a bit high. Tested and got 16.1! Lesson learnt! I'm not licking any more....!
 
I used to love making my own jam when I had a garden with fruit trees, bushes and plants.

There are recipes for low carb type jams that use alternative low carb diabetic friendly sweeteners (e.g. erythritol, stevia) and as you probably know some fruits, particularly citrus ones, are naturally high in pectin. So you have the basics there, and there are other, optional thickeners - I think some one on the forum has used chia seeds and I found a quick and easy recipe for strawberry jam which uses glucomannan aka Konjac powder. So you can make jam that's both diabetic friendly and "finger lickin ' good"!

Remembering the beautiful plum jam I used to make from my fruit, i'd happily wear XXL elephant's knickers if I could still have a lick of that! :D:D:eek:

ETA I'd better be careful what i read this afternoon, i'm trying not to eat until about 8pm and I don't want to make myself feel too hungry!

I will have a look at that thanks and make my own special jam. Ive not eaten jam sonce i was diagnosed and specially not now I've seen what it does to me but that little taste was so delicious!
