FLAX CRACKERS - variations

The starting point for this recipe is a Cleochatra recipe posted by Star. My adaptation is to mix it up in quantity and keep the seasoned mix on hand.</p><p></p><p></p><p></p><p>2 C flax meal</p><p>1 1/2 teaspoon (1/2 Tablespoon) onion powder </p><p>1 1/2 teaspoon (1/2 Tablespoon) celery salt</p><p>1/2 teaspoon garlic powder</p><p>1/2 teaspoon salt</p><p>1 teaspoon Italian seasoning</p><p>1/2 C grated parmeson or romano cheese</p><p></p><p>Mix all together and keep in a jar in the refrigerator.</p><p></p><p>Topping: All ingredients but flax meal, combined (in whatever quantities) and placed in a separate container (I use a snack-size bag thrown into the same container as the cracker mix.)</p><p></p><p>To make a serving or two of crackers, take 2 rounded tablespoons of the mix and combine with 2 tablespoons water. Mix and allow to thicken for a minute or two. Spread thinly on parchment paper and sprinkle with some of the topping mix. Microwave on high for 2 to 2.5 minutes. Remove from parchment paper and allow to cool. Break up into crackers. Great topped with cream cheese or flavoured spread.</p><p></p><p>Of course you can adjust the seasonings to whatever quantities and types/flavours you like.
