Flaxseed bun failure - what am I doing wrong?

I've seen the recipe all over the forum, so apologies for not crediting the ppl who posted it.

I'm basically doing this:

1tblsp melted butter (or cream, which is easier)
2 tblsp flaxseed flour/meal
1egg
1/4 tsp baking powder
Pinch salt

Beat into a batter and microwave in a silicon dish for 90 secs

It's ok. Just.
And if I smother it in nice tasting deliciousness, I'm fine.

But on its own, it is pretty dire.
How can anything be simultaneously bland, rubbery, earthy, boring and manky?

What am I doing wrong?
 
Did you grind your own flax seed or use pre-ground?
In my experience all flax seed is rancid, but pre-ground even more likely to be rancid than seeds you grind as needed.
 
Hey Brunneria .... if these are the flaxseed microwave mug muffins here's the way I make 'em. I have a savoury version and a sweet one but usually only have the savoury as they're way more tasty.

1/4 C Ground Flaxseed
Tsp Olive Oil
1 Egg
1/2 Tsp Baking Powder

Then for savoury one I add some salt and pepper, grated onion, parmesan cheese, finely chopped red and green peppers, chilli, grated carrot/zucchini, whatever takes your fancy. Put in a mug and microwave for about 80 seconds .. the moist ingredients need a bit more than a minute. Then I slice into 4 and put 2 slices in toaster and eat either with butter or a spread of soft fetta. Sometimes I eat it with a boiled egg.

The sweet version is the basic recipe plus some stevia or xylitol, cinnamon and a few blueberries thrown in. Again, the moist fruit makes the cooking time longer than a min. Trial and error. The sweet ones I really prefer with raisins in but too many carbs :-(

PS .. I always grind the flax seeds fresh in a coffee grinder. Don't ever buy them already ground as they will be rancid.
 
I use the same basic recipe as Lesleytwo but add a little water along with the olive oil. I split the mixture between two saucers & cook for 80 seconds on high. A toasted piece of this with peanut butter is quite nice :) FWIW I use Stoney Creek Organic Ground Flaxseed Meal which I keep in the fridge.
 
Brunneria, you're doing it exactly right. The key is to put something really savory between the two halves - (I like 1/2 avocado, sliced with 1 to 2 pieces of bacon; ham, cheese and a thinly sliced dill pickle is good too). Or to toast it and load it up with cream cheese. I miss my 1 min flax bun. I never tried it with peanut butter but I think I would have liked that too. :)
 
My vaiation is to add a pinch of Xanthan gum, use a shallow dish and bake in the( halogen) oven for around 20 mins until browned .

I also change the flours around, coconut, almond and flax so it's one tbsp of each , making a total of two tbsp , depending on what is in the pantry.

Every time I've tried the microwave version I don't like the result, so I would rather wait a little longer and use the oven . It seems wasteful though to use a whole, conventional oven , and that's where the halogen oven comes in to its own :)

I also use the top oven in the Rayburn, but that is slower still, around 45 mins :eek:

I will try all your suggestions, sometimes more than one at once...

First on the agenda is baking a bun, in the halogen, with added onion. I have some dehydrated very thinly sliced onion which looks like it might be perfect. served with CHEESE of course.

I just tried making one, I added mixed herbs and spread it with peanut butter. I must say it was very nice :)
 
I didn't like (milled) flaxseed on its own at all! So now I make them with 2/3 flax to 1/3 ground almonds (or rarely coconut four), then generally add grated parmesan. mustard, paprika, salt & pepper Or I replace the ground almonds with ground pecan nuts, grated baby carrots, cinnamon, nutmeg for mini carrot cakes. Both are nice with a soft cheese filling or topping. I tend to make a batch of them for the week and sometimes vary the amount butter and /or eggs I use - more of both makes them somewhat lighter, less can make them a bit more firm like rock cakes.

When I did mine, I sliced it in half and toasted it, smothered with butter/peanut butter and really enjoyed it. Not sure I would have liked it much as normal bread though.
 
Hi Brunneria,

I have to say that although I promote the 1min bun a lot due to its practicality I hate the taste of the flaxseed bun by itself although I eat it every single day for breakfast, but I just like eating it with strong flavoured stuff in it, like chorizo and creamy goat cheese, or ham and mustard etc, so I don't feel the taste of the flaxseed that much. Hope you find the combination that is right for you.

I wanted to ask you something else though... sorry to gatecrash but I've seen your green smoothie link in your signature, which one is your favourite green smoothie? Any one you particularly recommend?

I made one with onion, black pepper and a pinch of chilli. It was great.

Then I repeated it, toasted it, and served it with warm chicken livers (sautéed in butter with onion, garlic, and herbs. I just wish I had some red wine..).

That was the best so far.

Oh, and another benefit: a regular flax bun leads to wonderful, er... regularity.

Have you read the green smoothie thread? Lots of recipes there!
