Food bank donations

I help out at a local food bank and one thing really stands out if you are diabetic - the carb count of the food donated.
Practically speaking, everything has to be stored, so people are asked to donate tins, packets, dried goods and so on. We have clients who are diabetic and finding a range of foods suitable for them can be hard. Of course we look for tinned fruit in natural juice ( even so ..) and low sugar beans and try to get them interested in pulses, but it's hard.
What I am asking you to do is to find out about food banks near you and donate stuff that is more useful. Wholewheat pasta, unsweetened peanut butter, sweeteners - you might not agree with my choices, and it would be really useful if you could come up with suggestions. The people I meet cannot afford the diet that I eat to maintain my health. I want to help them more.
 
Good idea Debbie. How about tinned fish? Tuna, sardines, salmon. Not sure about carbs in tinned meat but might be worth investigating. Jars of carbonara sauce which I have found to be fairly low in carbs - just need to read the labels as they are all different. You are right though, it is hard to think of much that isn't fresh food. I assume there are no freezers at food banks?
