Food Ideas for Camping

My husband and I are going on our annual camping trip in three weeks, and I'm stumped on food options for me now that I've been diagnosed. We MIGHT be taking his parent's caravan, in which case I'd have a fridge, 4-burner hob, oven, grill, crock pot, and toaster and meals won't be too hard to sort out. If we decide to take our tent, I'm limited to the kettle, george forman grill (provided we get an electric hookup), and single-burner gas hob. Previous camping trips have involved eating lots of one-dish meals, and most of those are rice, potato, or pasta based, so I'm pretty well stumped. Assuming we have the George with us, I should be able to do grilled chicken or veggie skewers with salads, but I also am coming up against a wall for portable lunches, since our typical day involves breakfast at camp (cereal usually), a couple sarnies and apples for lunch on the go (usually on a railway!), and then back to camp for Tea. I no longer eat bread, so daily sarnies are out...and while I eat wholegrain wraps, they might not be available where we are camping (either all over Wales or all over Austria....we can't decide.)

Any suggestions?
 
Omlettes, fry your bangers first, chop then add to your eggs. Fritatta travels well. Big salad with all the usual suspects - eggs, fried/grilled chicken, tuna, salmon (from tins). Also check out soups that can go in a flask, think miso if you check is pretty low. If you go to Austria you should be ok with cold meats etc.
 
Thanks! Austria is my preferred destination, but we might have to be sensible and go to Wales again (did Austria in 2010, Wales in 2011). We've got loads of stainless steel flasks, I wonder what soup tastes like stored in those?

Anyway you could make up a batch of Granola, recipe here in the forum, take tins of coconut milk with you, this would sort your low carb breakfast, depends where you go camping, you might be able to pick berries somewhere close by?
I just googled low carb camping and there are loads of pages, see if there is anything that works for you.

Not sure about Austria, all I remember is their pastries, gateau and dumplings, but things might have changed a little since my visit there in the 80s.
Oh hold on, friends of ours went camping in Austria, a farm was up the road selling home cured meats and sausages and vegetables and eggs and cheese amongst other goodies, apparently such farms are all over the place.

Thanks! :) It's a combination of my name (Rebecca Jane) and a song by my favourite band, Barenaked Ladies called "Jane". The first line of the song is "The girl works at the store, sweet Jane St Clair"....Jane & St Clair also happen to be an intersection in Toronto, where the band is from :)

Thanks! I have been googling and reading, reading, reading nothing but articles with meal ideas for days...I started a spreadsheet and colour coded things by meal...it's shaping up to be pretty decent!

Hey dawnmc. I agree with you this food is very good for take care of Camping.
