Feeling really frustrated this morning. Had a good breakfast of eggs, cheddar cheese, mushrooms and courgette. Took my metformin 500g. 2 hours later, tested and 10.8mmol/L. Am I expecting too low results too soon?
Am going to my GP on Thursday for results for my fast blood test. Feels like everything is taking so long. Trying to be good, but not seeing enough results

maybe you are right...it's testing my patience and want to know more sooner. i have seen lower readings, but i guess i assume i had a good meal and expected to see a better result.
I found that even when my meals were good LCHF, if they are a big plateful, my BG does go higher than I'd hoped. Maybe that's it? Also, at the beginning, i.e. in the first month or so, I did get random variation, but that settled down, possibly due to the weight loss, but who knows?
It takes a while - I had a few readings in double figures in the beginning - did you test before you ate? The rise is as important as the number - e.g. If you were 8-9 before the meal the rise was acceptable if you were lower eg 5-7 then your meal may need a tweak or two.
Keep doing what you are doing and you will get the results your looking for - I know it's frustrating but your body has been "unwell" and not working properly for a while it's not going to get to where you want it overnight. I still get freaky readings now and again even now - I had courgette with prawns, mushrooms spring onion the other day - a well tested meal for me usually has me in the mid 5s I got a 7.7 why? Who knows maybe the wind changed direction? There are many many reasons besides food that cause our bs to fluctuate

You are on a low dose of Metformin. It takes a while to build up, and even when it does, the bgl lowering capability of 500mg dose will be small at best. It is a good drug, but not a miracle drug.
Personally I found I got better results if I take my Metformin 30 mins before the meal, since its main action is to block transfer of glucose through the liver, and I found it works best if it has dissolved and is already in the system before the meal digestion starts.
As said above, portion size matters. courgettes are low carb, but still have carbs, so will become significant if you eat enough in a meal.
Sounds like what you ate was fine then - it's just a matter of getting your pre meal readings down which will take a little time - keep going your doing all the right things
