Today I had my usual breakfast of black pud, egg and beans. That seems to satisfy me without making me feel tired. In fact, I was so OK with that today that when it came to lunch I wasn't really all that hungry but I wanted to go shopping so I didn't want to find myself hungry when I was out. I looked in my cupboard and found a tin of Chicken Soup. Not something I normally would have as a meal, it's one of my 'emergency rations' that any self respecting 1953 model would have in her store cupboard 'just in case'.

Well suddenly I found myself really fancying tinned chicken soup so I threw it in the microwave and had another look on the shelves and found a tin of mushy peas. Now mushy peas are something I probably eat once every 5 years or so, yet for some reason I have bought several tins of them 'just in case'. And I found myself fancying them too.

So, I checked the carbs and they seemed reasonable and I actually felt like eating carbs at that particular time, so I tipped half the tin of mushy peas into the chicken soup. My God, it was tasty. I thoroughly enjoyed it. I didn't have a spike, I felt completely satisfied and went to the shops.

And while I was at the shops I discovered a nice little treat - Kallo Organic Belgian Dark Chocolate Rice Cake Thins - 6.9g per biscuit. So I had 2 later on in the evening with a cup of coffee with single cream. Mmmmm.

This might sound weird but one of the pluses of having diabetes for me, is that I'm actually enjoying my food more now that I've cut out all flour based foods which have obviously just not been doing me any good. Whereas before I didn't look forward to eating, I simply ate because I knew I had to and after I ate I felt awful. Now I'm eating with enjoyment and relish and savouring my food. :)

apple definitely healthier but not much difference between the carbs in a smallish eclair (15) and an apple. In fact on my pump course the dietitian supplied them for a pre exercise snack. The timetable went up the creak and they weren't eaten when they were supposed to be. This was remedied when the 8 of us on the course had them for a pre bedtime snack( the courses where I live in France are in patient courses ) They were eaten with appropriate insulin where necessary and no harm came to anyone involved in the experiment.

My store cupboard is mainly, canned tuna, sardines and mackerel, canned coconut cream, a box of splenda and baking supplies such as bicarbonate of soda, baking powder etc. I have 8 medium sized boxes that are all full of my foods, all my flours, nuts, seeds, flax, bullion, herbs, spices etc. I also have two sets of shelving that have all my herb and spice jars, flax, flour most of what I keep in the boxes, but ready to hand, the boxes are where I store the bigger bags, boxes etc. The shelves also hold all my oils, vinegars, lemon and lime juice and other artificial sweetners etc. I then have a rack fixed to the side of the cupboard where I keep odd things like salt and pepper shakers, gelatine, creamed coconut and herbs and spices that I don't have my own jars for etc. So, I only have a shelf in the kitchen, while everything else I can't have is in the rest.

The fridge is mainly my things, as I do tend to always eat fresh produce, and not any packaged, maybe an odd bit of cheese once in a while.
