Quick question:

Let's say I wanna be a surgeon in the near future, Will I be able to become one if I have let's say type 1-2 diabetes? And do I have to put that on my CV when I apply to a hospital/clinic because its an important job and people's lives are literally in your hands.

Let's say I wanna be a surgeon in the near future,

It will take you close to ten years or more before you will become a surgeon, so it will not be any time soon.

Plenty of time to find out when you go through medical school...

You can be a surgeon with diabetes and you don't put it on your cv. Unless you want to use your experience with diabetes as an asset in the job application of course.
