Gastric reflux question

I will go back to intolerance, wether gluten, wheat, grains.
Celiac is in 1% of the population.
Wheat intolerance, sensitivity or even wheat allergy, is according to the stats, which may include metabolic syndrome, metabolic conditions, hormonal issues such as hashimotos, and of course, the types of diabetic and associated food conditions, allergies, intolerance and sensitivities.
It is around 10% of the U.K.population.

And it happens over time as we get older.
And the reliance on wheat, with the pandemic surge of the last fifty years plus and the increase in T2, it has to have an effect.

Wether cooking wheat flour has an effect?
No idea.
But the process including bleaching, additives etc, must!

So we should maybe switch to a sort of sourdough pasty and sausage roll? Maybe you have a point.
