It'a quite hard to find supplement tablets which contain iron nowadays, because if you get too much it becomes toxic. My T1 husband has a bit of an iron problem, because he has Chronic Kidney disease. I did find some tablets for Men's health, with iron in.Nevertheless, In the end he had to have a ferritin injection. ( a hospital procedure)
I'm interested that a diabetes nurse is encouraging blood testing for Glucose. That's pretty rare. They normally tell people not to and give the silliest reasons. In my view it's essential. The target I would say is 5, because that's non-diabetic level and I can't see the sense in setting any other target. The "official "targets are a lot slacker than that. I think, because they are fairly easily attainable.
If your Husband is to find which foods affect him most and least. select one meal on a particular day and test before and 2 hours after and keep a note of the meal and the readings.
Then if he ends up in the podition of so many T2 diabetics and can't get test strips on prescription, He'll be equipped with knowledge.
Best of luck
