Going to see fireworks tonight

Hello everyone. Hope you are all well.

I was just looking for some advice please. I have recently been diagnosed with gestational diabetes (although doctors think I actually may have been diabetic for years), so I am having to monitor my blood sugars and food very closely.
I'm still going through trial and error when it comes to food to see which foods are better for me etc. I've not eaten any white bread, bread rolls, etc and I am in a bit of a pickle tonight. I am off to a fireworks display and I don't know what food to have. I will be leaving quite early so too early for me to eat an evening meal before I leave. They will have the traditional burger vans, hot dog stands, hog roast etc, so wondering what is best for me to eat.
I am assuming I'm best to have a burger, but no bun. Hot dogs I can maybe eat (although they do contain some carbs) but again no hot dog roll??????? Even though I love the chips etc I know I will just have to stay away from it.
I currently am treating myself with insulin and I'm not sure how I will be able to inject myself. Obviously when going out it's a bit of guess work anyway. I am only injecting myself with small amounts currently, so was wondering if it would be ok to not inject straight away but maybe an hour or 2 later than normal. Really not sure if I will be able to after eating, although it will be dark so maybe I could.
Anyway I am rambling on, and I'm sure you all get the idea, or maybe have been in similar situations, so I would just like some advice really. It would be truly appreciated.
