Some tasty looking stuff there, thanks for posting. I do a lot of dishes with flank steak. I defrost it but before it is fully thawed, I slice it very thinly. It's much easier to get think slices this way. You can stir fry it in a couple of minutes and, if you cut it across the grain, it is very tender this way.
I have seen this blog before, I think it was when I was googling recipes for Brussels sprouts ( I'm addicted to them!) it has some lovely recipes - going to try the baked eggs in tomato sauce one this weekend - sorry forget the name of it, I made the chicken with Brussels sprouts one and it was great - but then anything with Brussels usually is!
I have an aubergine losing the will to live in the fridge may try this for lunch tomorrow
