Hi guys! My mom has been battling diabetes type 2 for many years now. However, making diet changes has been hard on her, especially since we have asian heritage that is known for a diet heavy on carbs. I decided that its time for a change and i wanted to gradually introduce her to some more appropriate meals for her condition. when looking for recipes i came across a grilled veggie pasta salad. it calls for the following:
whole Wheat Pasta
1 Large Zucchini
1Medium Eggplant
1 Small Red Onion
1 Red Bell Pepper
Baby Arugula
Kalamata Olives
Salt and Pepper
For the vinaigrette:
1Head of roasted Garlic
3 Tbsp of Balsamic Vinegar
4 Tbsp of Olive Oil
Of course thsi would feed a lot more than one person and i wouldnt put a lot of pasta in it. Just enough for my mom to transition more easily into the new diet. What do you guys think? Should i leave out some ingredient? Or does it look ok?
