Hi All ,
New On the forum,and getting sensible advice on how to manage my T2 .I have now started measuring my food intake , this has highlighted to me that previously i was consuming too much carbs(and there was me thinking i was A LOW CARBER),and i was UNDERESTIMATING what carbs certain foods have. So this is all new to me ,but its better late then never to start the journey on watching what goes into my mouth. I a have found out that Tescos Guacamole is only 2.6g carbs in 100g which i put on tescos poppyseed biscits which were 2.2 g per biccky and it tasted fantastic,especially washed down with some whisky and water.

I have to admit that I had never heard of Guacamole, just did a google and see it is a dip with advocado and lime. Sounds nice, I'll look for it next time I shop in Tesco.

Most of us have underestimated the carb content of food, still do occasionally despite doing a course that teaches the principles of carb counting. Remember though, the best advice is to eat to your meter, your bg readings will tell you which foods are kinder to your diabetes control.

I simply adore avocado and find it a valuable food. However, I just halve it and eat with somthing put into the hole where the seed used to be. That may be lime juice( delicious) or Worcester sauce or balsamic vinegar. I've even been known to have tuna mayo.

Ps I buy the avocados under ripe from Lidl and leave them in the fruit bowl a few days.

That's exactly what I do Hana, buy the bags of 3 when they're cheap (and hard as bullets) and leave them in the cellar until they start to ripen, and then bung 'em in the fridge.

A half avocado, thinly sliced and drizzled with walnut oil and lemon juice, and then sprinkled with crumbled walnuts and salt and freshly ground pepper is just delicious.

If they get overripe then I just make guacamole with them anyway.

why not make your own? Much fresher.
Like French Kittie, I buy the underipe ones when they're cheap, did just that in the market this morning.
Lots of recipes for guacamole on the net but basically, mashed or rough chopped advocado, lime juice, garlic chilli/cayenne pepper ,coriander, salt. Some recipes also include chopped tomato and a bit of chopped shallot as well or instead of the garlic.
 
We love Avocados! Fresh they're only 1.9g carbs per 100g so a really good diabetic food. We have them cut in half and like hanadr put a little bit of worcestershire sauce or balsamic vinegar in there. Jess likes them just halved and nothing else added, she scoops the insides out with a spoon. We also like them mashed and spread on toast, but obviously the toast adds to the carbs so keep that in mind.

They're also lovely chopped up and put into salads. If you haven't already tried a salad with avocado, crispy bacon bits and sliced hard-boiled eggs then you really must, delicious!

We also buy them under-ripe, wrap them in newspaper and store them somewhere cool until they ripen. You know they're ripe when you squeeze them gently and there's a little "give" due to softening. If you only plan to use half the avocado leave the pip/stone in the other half and wrap it in clingfilm before storing in the fridge. Leaving the pip in helps to prevent it discolouring.
 
It may be very 60s/70s but avocados with prawns in a spicy tomato and mayonnaise sauce is scrummy. :D
