had pasta but no spike?

Was diagnosed type 2 a couple of months ago, and have been on a low carb diet ever since, and with the help of metformin have got my levels down from 15-25 to 5.9-9 range.

But, eating with friends last-night I had a small bowl of pasta, and 2 hours later my levels were the same ( 7.8 ), and then this morning 6.5.

Was really expecting hem to shoot up, should I have tested later then 2hours, why no spike? :shock:
 
Pasta if eaten with a meal containing a high portion of fat (Spaghetti Bolognaise, Lasagna for example) will delay the absorption of the food and bg levels can still rise many hours after eating, as a type 1 I have to give a split dose of insulin to cover this delayed effect.
