Funnily enough, I put some buckwheat in my trolley for the first time last night whilst shopping at Sainsbury's.
I also saw some 'Polenta' which I bought solely on the strength of the label: per 100g: Protein 1.9; carbohydrate: 16.4, of which sugar 0.1; fat 0.9, of which saturates 0.1; Salt, trace.
I haven't a clue what I'm going to use it for but it might be fun finding out?
Makes a lovely meal with a green salad alongside.
One of my favourite fillings is : spinach/crème fraiche (that's easier here because it comes in little fozen cubes) , a bit of parmesan with a little crumbled crispy bacon, served with a tomato sauce (ie chopped tinned toms with garlic and herbs).
I have to admit, I don't make my own. I used to make them but have found ready made ones containing the same things I'd put in them.
