Hail the buckwheat

Hi all,

I've recently started eating buckwheat as my preferred carbs for some of my main meals and have had fanastic post meal bg numbers

Has anyone else experienced this?

Quinoa, and bulgar wheat aren't bad for my bs, and I'll be giving buck wheat a try now :thumbup:
 
Funnily enough, I put some buckwheat in my trolley for the first time last night whilst shopping at Sainsbury's.

I also saw some 'Polenta' which I bought solely on the strength of the label: per 100g: Protein 1.9; carbohydrate: 16.4, of which sugar 0.1; fat 0.9, of which saturates 0.1; Salt, trace.

I haven't a clue what I'm going to use it for but it might be fun finding out?
 
It's such a versatile seed

Try cooking in chicken stock with garlic and chilli. It seems to take on any flavour depending on what ingredients you cook with it :)

How about Galettes de Sarrisin (ie buckwheat pancakes)
This recipe has got a bit of wheat flour in it but not much.

Makes a lovely meal with a green salad alongside.
One of my favourite fillings is : spinach/crème fraiche (that's easier here because it comes in little fozen cubes) , a bit of parmesan with a little crumbled crispy bacon, served with a tomato sauce (ie chopped tinned toms with garlic and herbs).
I have to admit, I don't make my own. I used to make them but have found ready made ones containing the same things I'd put in them.
