Ingredients
2 pieces of salmon skin on no scales
2 teaspoons of harissa paste, I get it from Tesco, it’s spicy but not hot with a little bit of sweetened
Salt & pepper to taste
4 cherry tomatoes halved
100g cooked green beans
50g asparagus
A big teaspoon of mayonnaise
A teaspoon of smashed avocado- I buy the smashed avocado in a small tub from Tesco because I use it on other stuff, but you can just use avocado mashed up
Season to taste
Spread the harissa paste all over the salmon including the skin, season with salt & pepper. I do mine in my air fryer 12 minutes on roast (think it’s 190 deg) but you can do it in the oven just add a couple more minutes. Put it on a silicon liner or a bit of foil bit don’t wrap it, you’ll need the juices, skin side up with the cherry toms beside them & roast
Cook your green beans & asparagus, I cut mine up into smaller pieces once cooked
Mix your mayo & avocado, a squirt of lemon is nice
Once everything is cooked add your roasted tomatoes to the dressing along with any juices from the salmon & stir, add that to your green beans & asparagus & fold in, serve in a dish with your salmon on top crispy skin up and enjoy
