Oat, cranberry and orange cookies
Dry ingredients for mixer
1/2 cup plain or whole meal flour
1/2 cup almond flour
1/2 cup coconut flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon allspice
1 teaspoon cinnamon
2 cups rolled oats
2 cups dried cranberries
1 cup roughly chopped walnuts and pecan nuts
1/2 cup mixed seeds (chia, sunflower, pumpkin, sesame)

Wet ingredients for blender
1/4 cup melted coconut oil
1/4 cup melted butter
1 egg
1/4 cup brown sugar (goes in with the liquids so it melts)
1/4 cup Total Sweet (Xylitol)
1 teaspoon pure vanilla extract
2 whole ripe bananas, cut into pieces
1 teaspoon orange zest
Juice of one orange

Oven temperature: 170 in a fan oven
Time: 10 minutes
Calories based on 30 cookies: 166 - carbs 20 - fat 9 - protein 3 - sodium 87 - sugars 9

Mix the wet and dry ingredients separately then mix together.
Drop cookie dough in table spoonfuls or ice cream scoops onto a baking sheet and flatten with the palm of your hand.
Bake for 10-15 minutes until brown around the edges or completely brown, depending on how crunchy or chewy you want them.
Replace all the sugar with Xylitol if you wish, most of the sweetness comes from the fruit anyway.
Use a low fat alternative to the butter and coconut oil and use plain flour instead of almond and coconut if you want to lower the fat content. However this will raise the carb content
