Helleau Everyone!

Just re-joining this forum after leaving it about a day ago at my husband's request. I still can't get him to join, but he has been reading everything on this massive forum after I threw a missy fit because LSD (not the drug but Life Since Diagnosis) had become intolerable. Poor soul had taken everything Nurse Death at the clinic had told him to heart and decided that, effectively, his life was over. Food was his only pleasure, being fairly immobile and restricted in everything he does after a bad fall and failed spinal surgery turned him from a sporty hill walker to being almost housebound.

I am extremely pleased to say that we have had a complete volte face, we are now reading everything we can find and he has decided he's going to low carb combined with Bitter Melon capsules. Life is, once again, worth living thanks to this Forum and the recipes and information on it.

Thanks to AnnieP for her chocolate cake recipe, I've just baked it (so easy) and turned out wonderfully. We'll sample it after supper!

Hi Julia and welcome back :) I'm glad your husband has changed his mind. Thank you for the webcam link - I will have a look at it at the weekend.
 
That cake looks absolutely gorgeous. Can you please give me the recipe? I can't find it in the forum.

Low Carb Chocolate Cake

Pre Heat oven to 180C

23cm lined and buttered cake tin ( I just used a tin liner)

150g dark chocolate (80% or above)
150g butter
6 eggs
20gm of splenda ( I used Aldi Sweetener 99p jar)
tsp vanilla essence
100g ground almonds
1tsp cinnamon and a pinch of ground cloves
2tsp instant espresso


Melt butter and chocolate together. Beat eggs vanilla and sugar together until frothy.
Gently fold in dry ingredients - and then fold in chocolate/butter mixture. Stir gently until the mixture thickens - it's the oddest thing, how it thickens...

Pour into the tin, bake for 35-40 mins. Remove from the oven and cover with a tea towel until cool. It will fall a couple of inches and be very moist inside.

You can eat this slathered in fresh cream and it will still be low carb!

welcome back glad your husbands going to try the low carb diet .im a newbie myself and feel so much better having the lovely people on this forum to listen and give advice where needed .
