help needed please.

It is possible that the Dawn Phenomenon is playing havoc with your husband's morning readings.
When I have any meal I try to make sure that it is not an all protein event. So I would have bacon, an egg, and slices of zucchini with a mushroom or two. I do not have a problem with adding fat to my diet and my cholesterol since weight loss stabilised is great so I would have melted butter and cracked pepper on my zucchini or olive oil drizzled over it.

My favourite current breakfast is stewed quince and choko or stewed rhubarb and choko with a dash of lemon juice and a sprinkle of st**ia with a dollop of double cream and a sprinkle of home made nut granola (recipe on mrbreakfast.com and elsewhere in this forum) on top. Some times I make a psyllium husk pancake and put the stewed vegetable (I realise that quince is a fruit though) in it and serve with cream too.

I currently have a slab of belly pork in the fridge covered in a dry rub preparing to be my first attempt at nitrite free bacon. Have all the stuff to smoke it too and it smells devine! The finished product will go into my freezer for added safety once sliced.

If you put breakfast into the search box you will come up with a myriad of posts and ideas for things to eat.

You could try the cooked options like bacon, egg with whatever trimmings he can tolerate. Fish, smoked or otherwise. Eggs cooked in all kinds of ways accompanied by tomatoes or mushrooms etc.
Try home made granola topping on the recipe thread of the Food Forum on top of fruit and yoghurt with cinnamon. You will also find breakfast muffins there which are good served with cream cheese. The search as mentioned will give you even more ideas.

That rise in BG seems reasonable - 110 to 130 2 hours after eating. In UK units, it's 6.1 to 7.2. That should not cause any problems.

The body does generate its own blood glucose - does it ever go above 140?

What is his HbA1c?

I find high BGs occur when I eat late. Overnight digestion results in a high morning reading.

Your husband may need medication to aid his control. My readings would be higher without metformin.

Suspect my bacon sources might not be of help to you as I live in Australia these days. I really think that if you do an internet search the UK would have plenty of lovely options and I fondly remember bacon being much nicer than the supermarket stuff we get here.
As I write my home cured, dry cure, bacon experiment is about to go into my BBQ bacon "smoker". Winter is upon us with a vengance and it is very rainy and cold so it is just the right weather to try the smoking effect .
If you are contemplating a visit to our beach haven, you are welcome to come stay and be a test pilot for my low carb hospitality!
