Help understanding Libre2 bloodspike readings please

I am trying to bring my blood sugars down with medication and diet. my HBA1C was 71 earlier this year and I have brought it down to 61 by using a Blood Glucose Monitor alongside metformin. My aim is to get to HBA1C 48 (which seems a long way off) and I have lost 3 stone over a couple of years. I find that seeing in real time what my blood sugars are doing really helps me make good decisions about food.

What I am wondering is what I should be aiming for with the blood sugar spikes. I understand that food, exercise and stress will impact my blood sugars but don't know what is an 'ok' normal spike and how many times a day. For example, if I have 2 bits of brown toast with marmite for breakfast my blood sugar can spike from 8 - 13 and then drops back, it seems to be a similar spike for a piece of flapjack! Does this mean that I should never have bread. Is it ok to have 3 spikes during the day or should i be reducing number of spikes.

I guess my main question is whether I should be focusing on the height of the blood sugar spike or the number of times it spikes or both. I am a bit confused! Any help with this would be awesome. Thanks, Sarah.
