Help urgent cooking advice needed!!

I am cooking for friends tonight and my starter is a broccoli and blue cheese soup, the recipe includes one large potatoe, now I low carb and as I shall be eating more than ususal tonight I wonder if it would have major consequences if I leave it out? Not much in the soup other than onion, stock, broccoli and blue cheese, do you think it would be too thin if I left out potato, obviously won't affect the flavour? Recipe only specifies one large potatoe, obviously I could just put a small one in, but would prefer to leave out altogether as I can't do potatoes.
Any advice welcome as I am due to start cooking soon!
 
How about cooking it without potato, removing your portion then adding potato and cooking that up for everyone else ?
If you slice the potato thinly it will not take long to cook.

thanks both of you for your ideas :)
I will cook it a little early and if necc, cook up a potatoe quickly to thicken,
but I have loads of cream for pud, so I will try a bit of that to thicken first,
will let you know how it goes, recipe gets excellent ratings on bbcgoodfood site, which I have found good before.

Just a bit of feedback, ended up the soup was perfect without the potatoe, went down well, people had seconds!
For low carbers the recipe is good,
fry one large onion till soft, then add 1 litre of water, boil two medium heads of broccoli till just tender, then whizz up with 4 ozs blue cheese, needed plenty black pepper and a pinch of salt.
St Agur blue cheese is on bogof at Tescos at the moment at £1.99, second packet has date on it till mid Jan so have put it away for christmas.
Thanks again for help, feel very naughty this morning as I ate 6 :oops: lindt truffles, only second trangression in one year of lowcarbing!
