Help with levels and carb counting?

Hey everyone im pretty new to this forum so i hope im poting in the right place..
Long story short im a type 1 and im on levemere and Novo rapid have been for about 14 months now but ive been a type 1 since september 2009. My levels have been pretty good recently but ive found that even when i only have low sugar products my bloods hit the roof!
Ive never been told about carb counting by my doctor only to count the sugar in foods..
I honestly dont have a clue where to start with carb counting?
I was wondering if anyone could help me out? Like how many carbs i should have in a day? a week?
also what foods should i avoid?
I have a pretty healthy diet ( lots of fruit and veg, i totally cut out sweets and sugar as of 6 month ago) however i still cant seem to get my bloods under control

Any help would be appriciated as my doctor says im doing the right thing but i just feel like im getting nowhere :(
 
Both sugar and starchy carbohydrates will raise your BG. And whilst low sugar is not necessarily bad (e.g. adding 20g sugar to weatabix won't make you feel any fuller but still has extra carbs and calories) it won't really improve control. There should be courses offered to cover this - DAFNE et al.

As for what you should eat, I think you'll find advocates for two very different approaches: The traditional approach is 200g carbs per day with appropriate insulin, 2000 calories - the stuff they put on all food labels - and the low carb camp recommends less than 30g carbs a day (Bernstein's Diabetes Solution).
I follow the traditional approach since my nutritionist explicitly told me not to eat a low carb diet when I asked her about low carb.
