Help with Low Carb Diet Prediabetic

Hi! My last hba1c was 5.8 and I am looking for help in how to change my diet. For breakfast I usually eat scrambled eggs with vegetables and cheese, and lunch/dinner either fish with veggies or rotisserie chicken. I do snack often on almonds, pork rinds, cheese. At my latest doctors visit my doc said to do more moderate/high intensity exercise as my job is very sedentary and to cut back on the processed meats as my cholesterol was elevated. I do not eat bread or grains. Any suggestions to help me? My hba1c has been at 5.8 since last years check as well...

You seem to be doing fine with what you are eating already. Are you looking for a keto way of eating? Do you need to lose weight? If you can tell us a bit more I am sure folks will come up with suggestions.

I have been trying to eat low carb but I am not sure if the amount of rotisserie chicken, eggs, cheese, or nuts I am eating is contributing to my high cholesterol and glucose levels staying the same and not lowering as without the main carbs I ate in the past I seem to be very hungry(bread, rice, ect)
My fasting glucose last week at my doctors was 113 which if high for me
I just started eating these types of food over the last 8 weeks
Weight wise I am actually at 100lbs
I am going to try to exercise more but am wondering if for my type of body maybe dieting itself is not working

If your HbA1C is 5.8% then it is nicely below the pre-diabetic range, so congratulations.
You seem to be eating Low Carb already. Though rather than snacking, it is better to have longish periods of no eating between meals, or even having long periods between meals if doing Time Restricted Eating aka 16:8 . Still if you must snack then at least you are snacking on the most suitable foods- I never feel guilty if I overeat (or snack) on cheese or nuts (but not Cashew nuts).and Pork Scratchings are a treat.

At 100lbs, are you at normal BMI or underweight? It seems unlikely that you actually need to lose weight.
30min of moderate exercise per day is ideal e.g. a brisk walk. Brisk means you can hold a conversation, but are unable to sing while walking at that speed.
Vigorous exercise does little to lower Blood Glucose, moderate is better as is resistance exercise e.g. squats, push-ups, weights which build muscle which can then store glucose out of the bloodstream.
 

Thank you for your input, i should try not snacking as much, I find I am a grazer and like snacking but hopefully I can get myself to stop

Welcome! I gather protein has about 50% the blood glucose effect of carbs, so excess protein is potentially a problem (and would prevent weight loss) but 5.8 is Normal so you seem to be doing OK in that regards.
