I obviously don't wish to cause alarm but I would strongly urge you to see your GP or even go see a specialist privately if you are able to afford it as soon as you can. You should have some tests done to rule out any other problems that might be causing your sugar to rise. The medication you're taking should certainly be controlling your sugar but it can also happen occasionally that you get spikes even when taking your meds properly; I had a spike while I had a bad cold and sore throat and evidently these things can throw your sugar off balance.
As to diet coke - I'm afraid most people would say that 6-8 cans is way too much, bear in mind that it might not contain sugar but it does contain other ingredients which we probably would be better off without having them inside us. I would strongly urge you to make a healthy switch to plain soda with a slice of lemon in - you'll find after you get used to that you won't want anything else.
As for the chocolate, look, we're all human and are prone to misbehave on the occasion, it probably wouldn't be normal if we didn't, but once again we just to have swear off the stuff on a daily basis - no way around it. If you really can't make do with the odd treat every now again, the best thing might be to practice an approach that is encouraged in Overeaters Anonymous - abstinence. I go to a local OA group and have met people that haven't touched sugar or white flour for 10 or even 20 years; it simply isn't part of their food, full stop. It's a really tough concept to adopt and takes a lot of work but many people who have done experience a real sense of freedom.
Having your sugar suddenly spike can really rattle you as I know only too well but if you have the peace of mind of knowing that nothing untoward has happened and you don't have any conditions that need dealing with you should be able to handle it better. Hopefully, with the correct action on your part it will settle down again.
I would also reccomend you to make meditation practice a part of your weekly routine and even daily if you have the time for it. The benefits don't happen overnight obviously, but over time you will feel the difference. I certainly do.
