Higher at 2 hours than 1 hour post meal..

My husband made a meal that I didn't join him in eating because half of it was mashed potatoes. The other half was a baked sauerkraut (cabbage) with onion and bacon and sausages,

My husband had about 2 whole potatoes worth of mashed potato and the cabbage part is rather oily apparently. He's not diabetic as far as we know.

I didn't measure before this meal but I would assume he was either in the 4s or maybe low 5s.
He fell asleep after eating, which is why I wanted to check.
1h he was 5.6mmol.
2h he was 6.3mmol.

Last time I randomly checked his blood glucose levels it was also after a meal with mashed potato (2-3 whole potatoes) and slow cooked chicken gizzards and onion.

Before 5.6
1h 7.3
2h 5.4

Was the slow rise the second time due to the fat/oil content or is this a slightly diabetic response??

His father had (we think T2) diabetes so I wanted to check his sugars periodically since I'm still checking mine.
 
My post prandial readings are almost always higher after 2 hours than 1 hour due to the fat content of my meals. The numbers you’re quoting don’t look concerning at all.

That is thee advantage or disadvantage of fat in a meal.
Fat slows digestion so glucose is digested slower too. Fat at the right level for yours/husband's purposes would be my advice.
