I am not that fond of sweet things such as jam, but the use of chia seeds with sweetners and berries looks as though it would be an acceptable replacement.

The difference being that taditional jams made with sugar are a method of preserving the fruit. This won’t happen with chia seeds, but perhaps chia seed jam can be frozen.
A couple of times I've tried small amounts but with sweetners working out 20x the price of sugar it can be very expensive , and I didn't like the results.
I did lots of preserving before diabetes and the sweeteners don't act like sugar and they can have funny after tastes and laxative effects.
Mostly now I freeze to preserve fruits and vegetables from the garden.
I did a lemon curd once and tried adapting a plum curd recipe I used to love, but it spiked my bg.

I made a small amount of blackcurrant jam using blackcurrants from the garden, Sukrin gold sweetener, simmered together until the berries broke down, then added xanthum gum to thicken. I’m sure chia seeds would work instead. It lasted around a month in the fridge and was very nice with a couple of teaspoons stirred into Greek yoghurt to make a blackcurrant yoghurt.
I’ve bought a cheap ice cream maker as well and plan to make blackcurrant ice cream this week as we are swamped with ripe blackcurrants.

I still make my own marmalade. I never liked the oversweet bought stuff so preferred my own jam and marmalade.
I use seville oranges in season, then add a small amount of either xylitol or erythritol. You need to boil it down more as there is no added sugar to thicken it. The result is a very intense flavour so I only use a little.
I still sterilise the jars but the lack of sugar means it can go off, however, it keeps in the fridge for months.
Yes I’ve made blueberry jam with chia seeds and erythritol. I add a half a teaspoon of xantham gum and simmer it for about 10 minutes. I haven’t made it in a while as trying to keep off sweet things but it was nice on keto mason jar ice cream or low carb toast.
