I did lots of preserving before diabetes and the sweeteners don't act like sugar and they can have funny after tastes and laxative effects.
Mostly now I freeze to preserve fruits and vegetables from the garden.
I did a lemon curd once and tried adapting a plum curd recipe I used to love, but it spiked my bg.
Chia "jam" can be made in small quantities and used like a compote
Try googling "keto jam" and I'll be interested to hear if you find anything that works and is affordable
