I have read conflicting information on the safety of homemade whey for diabetics. If I take whole milk, curdle it with lemon and separate the liquid whey from the milk solids with a strainer, is it safe? How much is too much? (Not about whey powder.) Thank you.
Just had a quick read , but looks like a no-no to me
"The predominant nutrient in milk whey liquid is carbohydrates in the form of lactose, or milk sugar. A 1-cup serving of both sweet whey and acid whey contains nearly 13 g of carbs "
