My understanding is that a normal non-diabetic reaction to anything should be below 7.8 as the body manages to get release enough insulin to safely tuck away the excess glucose - however I don't believe there have been many studies done on this. I wouldn't be surprised if everyone's spike levels were slightly different
A good way to test is right before you take the first bite, 1 hour after and then 2 hours after. That will give you a good view of the spike and how quickly you go back down.
