Hi and welcome,
I carb and calorie count. I stuck to 1200 calories, which was recommended for someone of my age, height, weight and exercise level. It is correct that too few calories for your personal statistics will slow down the metabolism, put your body in starvation mode, and weight loss will plateau. But we are all different in how many calories we need, although 1200 seems reasonable for most dieters.
On 60g carbs and 1200 calories I lost over 4 stones to reach target weight, but in order to find those calories I had to up my fats and eat butter, full fat yogurts, loads of eggs, and fry ups. Once I reached target weight I really struggled to stop losing despite increasing my calories by adding cheese and some cream to my menu. I am now on 1600 calories and losing the odd pound here and there, so I really need to increase my calories a tiny bit more.
