Hi Jan, unfortunately no one can tell you how many carbs a day you should or can eat as it is a very personal thing, so the amount of carbs that I eat may be too many for you or it may be that you could eat more than me.
All I would say is test your bg levels before every meal and two hours after eating and then reduce your carbs downwards as necessary till the differential between the two is less than 1 to 2mmol/L.
So if your pre meal level is say 7mmol/L then you want to be looking for a postprandial (after meal) reading of less than 9mmol/L and preferable as close to 7 as you can get it, but if you are newly diagnosed thats not going to happen over night which is why I say 1 or 2 mmol/L more after meals as this is more achievable.
If you can do this then your other readings, fasting etc will start to come down to acceptable levels. In other words close the gab between your pre and post meal readings and all your readings will reduce to within NICE recommendations/safe levels.
Be warned that if you go too low on carb reduction you are likely to make yourself more sensitive to carbs which is obviously not desirable at all. Better to bring your levels down little by little and then if you can lose weight your insulin resistance will reduce and you will find that you can eat more carbs per meal. Weight loss and bg control will drop at the same time if you can get it right
To lose weight you need to reduce the calories you eat ie eat less food = eat fewer calories
