I would see what happens first without dosing, then next time experiment with dosing depending on my findings the first time, and finetune dosing and timing depending on results after that.
I'm never worried about spikes with new foods, they're simply a learning opportunity. Even more so with foods I have regularly, they're the foods to take notes to learn to perfectly dose for.
I eat lowish carb to minimise spikes and dosing misjudgements, but I love my high carb Belgian specialty beers so I'm good at dosing and timing for them now.
